Jalapeño Pimento Cheese Preparation

    In a mixing bowl, combine cream cheese and sharp cheddar cheese. Mix until well blended and smooth.

    Add chopped pimentos and diced jalapeño to the cheese mixture. Adjust the amount of jalapeño based on your heat preference.

    Stir in mayonnaise, garlic powder, onion powder, salt, and black pepper. Mix until all ingredients are well incorporated.

    Taste the mixture and adjust seasoning if necessary. Cover and refrigerate for at least 30 minutes to let the flavors meld.

Sandwich Assembly

    Heat a skillet over medium heat. Spread butter on one side of each slice of wheatberry bread.

    Place two slices of bread, buttered side down, onto the skillet.

    Spread a generous amount of jalapeño pimento cheese on each slice of bread in the skillet.

    Layer with lettuce leaves and tomato slices on top of the cheese.

    Top with the remaining slices of bread, buttered side up.

    Grill the sandwiches for about 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese is melted.

    Remove from skillet, slice in half, and serve immediately.
