Method
Preparation
Prepare the Brisket
If not already done, smoke the brisket according to your recipe or preferred method until tender. Once cooked, shred or chop the brisket into bite-sized pieces.
Prepare the Cheese
In a mixing bowl, combine the shredded cheddar cheese and Monterey Jack cheese. Set aside.
Prepare the Jalapeños
If using fresh jalapeños, slice them into rings. If using pickled jalapeños, drain them and set aside.
Assembling the Nachos
Layer the Chips
Spread the tortilla chips evenly on a large baking sheet or ovenproof platter.
Add Brisket
Evenly distribute the smoked brisket pieces over the tortilla chips.
Add Cheese
Sprinkle the cheese mixture generously over the brisket and chips.
Add Jalapeños
Top with sliced jalapeños, spreading them out evenly.
Baking
Bake the Nachos
Preheat the oven to 350°F (175°C). Bake the nachos for about 10-15 minutes, or until the cheese is melted and bubbly.
Add BBQ Sauce
Once out of the oven, drizzle BBQ sauce over the hot nachos to taste.
Serving
Serve Immediately
Serve the brisket nachos hot, with additional BBQ sauce on the side for dipping if desired.
