Prepare the Chicken
In a large bowl, combine the olive oil, garlic powder, cumin, salt, and black pepper. Mix well.

Marinate the Chicken
Add the boneless, skinless chicken breasts to the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes.

Grill the Chicken
Preheat your grill to medium-high heat. Once hot, place the marinated chicken breasts on the grill and cook for 6-8 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

Melt the Cheese
During the last few minutes of grilling, sprinkle the shredded Monterey Jack cheese over the chicken breasts and close the grill lid. Allow the cheese to melt for about 2-3 minutes.

Assemble the Dish
Remove the grilled chicken from the grill and let it rest for a few minutes. Place each chicken breast on a serving plate and top with diced green chiles, shredded lettuce, diced tomato, sliced onion, and sliced pickles.
