Prepare the Chicken
Begin by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the chicken to an even thickness of about 1/2 inch.

Season the Chicken
Season both sides of the chicken breasts with salt, black pepper, and garlic powder.

Assemble the Cordon Bleu
On one half of each chicken breast, layer 2 slices of smoked ham and 2 slices of Swiss cheese. Fold the chicken over to cover the filling, securing with toothpicks if necessary.
Breading

Prepare the Breading Station
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

Bread the Chicken
Dredge each stuffed chicken breast in flour, shaking off the excess. Dip into the beaten eggs, then coat thoroughly with breadcrumbs.
Cooking

Cook the Chicken
Heat olive oil in a large skillet over medium heat. Once hot, add the breaded chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C).

Toast the Bread
While the chicken is cooking, toast the slices of wheatberry bread until golden brown.
Assembly

Assemble the Sandwich
Once cooked, remove the chicken from the skillet and let it rest for a couple of minutes. Then, place one chicken breast on a slice of toasted wheatberry bread, top with another slice of bread, and repeat for the second sandwich.
