Ingredients for Speaker's Catch

Method

Directions for Preparing Speaker's Catch

  1. 1

    Prepare the Ingredients

Begin by gathering all your ingredients. Rinse the catfish filets under cold water and pat them dry with paper towels.

  2. 2

    Season the Catfish

In a shallow dish, season the flour with salt and black pepper. Dredge each catfish filet in the seasoned flour, making sure to coat both sides evenly.

  3. 3

    Set Up Breading Station

In a separate bowl, whisk together the eggs and milk until well combined. In another shallow dish, place the cornmeal. Dip each flour-coated filet first in the egg mixture and then in the cornmeal, pressing to adhere.

  4. 4

    Fry the Catfish

In a large skillet, heat the cooking oil over medium-high heat. Once the oil is hot, carefully add the breaded catfish filets. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove the filets and drain on paper towels.

  5. 5

    Prepare the Vegetables

While the fish is frying, slice the tomato and onion into thin rings. Rinse the lettuce leaves if necessary.

  6. 6

    Toast the Buns

In another skillet or on a grill, toast the hamburger buns until golden brown.

  7. 7

    Assemble the Sandwiches

Spread a generous amount of tartar sauce on the bottom half of each toasted bun. Place a lettuce leaf on each, followed by the fried catfish filet, onion rings, and tomato slices. Top with the other half of the bun.

  8. 8

    Serve

Serve the sandwiches warm with extra tartar sauce on the side, if desired.
