Preheat the Smoker
Preheat your smoker to a temperature of 225°F (107°C).

Prepare the Rub
In a small bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper.

Apply Olive Oil
Rub the pork ribs with olive oil to help the spice rub adhere.

Evenly coat the ribs with the prepared spice rub, ensuring all sides are covered.

Smoke the Ribs
Smoke the ribs for approximately 4-5 hours, or until they reach an internal temperature of 190°F (88°C) and are tender.
Prepare the BBQ Sauce

Combine Sauce Ingredients
In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, black pepper, and mustard.

Simmer the Sauce
Bring the mixture to a simmer over medium heat, stirring occasionally, and let it cook for about 15 minutes to thicken.
