Prepare the Bologna Steak
Remove the Bologna steak from its packaging and pat it dry with paper towels to remove excess moisture.

Season the Steak
Rub the Bologna steak with olive oil, then season both sides with salt, black pepper, garlic powder, onion powder, and paprika. Ensure the seasoning is evenly distributed.

Soak the Wood Chips
In a bowl, soak the pecan wood chips in water for at least 30 minutes to ensure they smolder and produce smoke during grilling.

Preheat the Grill
Preheat your grill to medium-high heat (approximately 375°F to 400°F).

Prepare the Grill for Smoking
Once the grill is preheated, place the soaked pecan wood chips in a smoker box or wrap them in aluminum foil, poking holes in the foil to allow smoke to escape. Place the smoker box or foil packet on the grill.

Check for Doneness
Use a meat thermometer to check that the internal temperature of the Bologna steak reaches at least 165°F to ensure it is fully cooked.
Serving

Rest and Garnish
Once cooked, remove the Bologna steak from the grill and let it rest for a few minutes. Optionally, sprinkle fresh parsley on top and serve with lemon wedges on the side.
