For the Baked Potatoes

Method

Preparing the Baked Potatoes

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Wash and Prepare Potatoes

Scrub the russet potatoes under cold water to remove any dirt. Pat them dry with a paper towel.

  3. 3

    Season the Potatoes

Rub each potato with olive oil and sprinkle with salt and black pepper to taste.

  4. 4

    Bake the Potatoes

Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until fork-tender.

Making the Jalapeño Pimento Cheese

  1. 5

    Combine the Ingredients

In a mixing bowl, combine the cream cheese, shredded sharp cheddar cheese, diced jalapeños, diced pimentos, garlic powder, onion powder, cayenne pepper, and salt.

  2. 6

    Mix Until Smooth

Using a hand mixer or a wooden spoon, mix until all ingredients are well combined and smooth.

  3. 7

    Refrigerate

Cover the mixture and refrigerate for at least 30 minutes to allow flavors to meld.

Assembling the Baked Potatoes

  1. 8

    Prepare the Potatoes for Topping

Once the potatoes are baked, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently squeeze the ends to open them up.

  2. 9

    Add the Jalapeño Pimento Cheese

Spoon a generous amount of the jalapeño pimento cheese mixture into each opened potato.

  3. 10

Top with Bacon and Green Onions

Sprinkle the crumbled bacon and chopped green onions over the cheese-filled potatoes.

  4. 11

    Finish with Paprika

Dust a little paprika over the top for added flavor and presentation.

  5. 12

    Serve

Serve the loaded baked potatoes warm and enjoy!
