Method

Steak Preparation

  1. 1

    Season the Steak

Generously season both sides of the center-cut ribeye steak with kosher salt and freshly ground black pepper. Let it sit at room temperature for about 30 minutes to allow the seasoning to penetrate the meat.

  2. 2

    Prepare the Cooking Surface

Heat a cast-iron skillet over medium-high heat. Add olive oil and allow it to heat until shimmering but not smoking.

  3. 3

    Sear the Steak

Carefully place the seasoned ribeye in the hot skillet. Sear for about 4-5 minutes without moving it to develop a nice crust.

  4. 4

    Add Aromatics

After searing, flip the steak and add crushed garlic cloves and fresh rosemary sprigs to the skillet. Continue cooking for another 4-5 minutes.

  5. 5

    Baste the Steak

Add unsalted butter to the skillet. Once melted, use a spoon to baste the steak with the melted butter and aromatics for about 1-2 minutes.

  6. 6

    Check Doneness

Use a meat thermometer to check the internal temperature of the steak. For medium-rare, aim for 130°F (54°C). Adjust cooking time as necessary.

  7. 7

    Rest the Steak

Remove the steak from the skillet and transfer it to a cutting board. Let it rest for at least 10 minutes before slicing.

Optional Sides Preparation

  1. 8

    Prepare Asparagus

While the steak is resting, prepare the asparagus. Rinse the asparagus under cold water and trim the tough ends.

  2. 9

    Season and Cook Asparagus

In the same skillet used for the steak (remove excess grease if necessary), add olive oil and heat over medium-high heat. Add the asparagus and season with salt and black pepper. Sauté for 5-7 minutes until tender-crisp.
