    Clean the Shrimp

    Rinse the jumbo Gulf shrimp under cold water and pat dry with paper towels. If not already done, remove the shells and devein the shrimp, leaving the tails intact for presentation.

Batter Mixing

    Mix the Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Whisk until well blended.

    Add Water

    Gradually add the cold water to the dry mixture while whisking to create a smooth batter. The batter should be thick enough to coat the shrimp but still pourable.

Frying

    Heat the Oil

    In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it's ready.

    Batter the Shrimp

    Dip each shrimp into the batter, ensuring it is fully coated. Allow excess batter to drip off before frying.

    Fry the Shrimp

    Carefully place the battered shrimp into the hot oil, working in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until they are golden brown and cooked through.

    Drain and Serve

    Using a slotted spoon, remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
