Prepare the Shrimp
Rinse the jumbo shrimp under cold water and pat dry with paper towels. Season with salt and black pepper, ensuring they are evenly coated. Set aside.

Make the Batter
In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, garlic powder, and paprika. In another bowl, whisk together the eggs and buttermilk until smooth. Gradually add the wet mixture to the dry ingredients, stirring until just combined. The batter should be thick but pourable.

Heat the Oil
In a large, deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Shrimp
Dip each seasoned shrimp into the batter, allowing excess to drip off. Carefully place the battered shrimp into the hot oil, ensuring not to overcrowd the pan. Fry in batches for about 3-4 minutes or until golden brown and crispy.

Using a slotted spoon, remove the fried shrimp from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
