Prep the Jalapenos
Carefully slice each jalapeno pepper in half lengthwise and remove the seeds and membranes using a spoon. This will help reduce the heat level.

Make the Filling
In a mixing bowl, combine the cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, pepper, and bacon bits. Mix well until smooth and creamy.

Fill the Jalapenos
Using a spoon or piping bag, fill each jalapeno half with the cream cheese mixture, packing it in generously.
Breading and Frying

Prepare the Breading Station
Set up a breading station with three shallow dishes: one with all-purpose flour, one with beaten eggs, and one with bread crumbs.

Bread the Jalapenos
Dredge each filled jalapeno half in flour, shaking off the excess. Dip it into the beaten eggs, then coat it with bread crumbs, pressing gently to adhere.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Poppers
Carefully add the breaded jalapeno poppers to the hot oil, a few at a time, and fry for about 3-4 minutes or until golden brown and crispy. Turn occasionally for even cooking.

Drain and Cool
Using a slotted spoon, remove the poppers from the oil and place them on a paper towel-lined plate to drain excess oil.
