Dough Preparation

Activate Yeast
In a small bowl, mix warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Mix well.

Combine Ingredients
Make a well in the center of the flour mixture and add the frothy yeast mixture and olive oil. Stir until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Baking the Pita Bread

Preheat Oven
Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat.

Shape the Pitas
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then flatten it into a circle about 1/4 inch thick.

Bake the Pitas
Carefully place the pitas on the hot baking stone or baking sheet. Bake for 3-5 minutes, or until they puff up and turn lightly golden.

Remove and Cool
Remove the pitas from the oven and cover them with a clean towel to keep them warm and soft.
Serving

Add Toppings (Optional)
If desired, brush the hot pitas with olive oil, sprinkle with sesame seeds, and season with sea salt.

Serve the hot pita bread immediately with dips or as a side to your favorite dishes.
