Salad Preparation
- 1
Prepare the Chicken
Season the grilled chicken breast with salt and pepper. Grill over medium heat for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, let it rest for a few minutes and then slice it into strips.
- 2
Prepare the Lettuce
Wash the romaine lettuce thoroughly under cool running water. Dry the leaves using a salad spinner or by patting them gently with a kitchen towel. Chop or tear the lettuce into bite-sized pieces and place in a large salad bowl.
- 3
Add Croutons and Cheese
Add the seasoned croutons and grated parmesan cheese to the bowl with the romaine lettuce.
Dressing Preparation
- 4
Make the Caesar Dressing
In a medium bowl, combine mayonnaise, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, salt, black pepper, and grated parmesan cheese. Whisk until smooth and well combined.
Assembly
- 5
Combine Ingredients
Drizzle the Caesar dressing over the salad and toss gently to coat the greens, croutons, and cheese evenly.
- 6
Add Chicken
Top the salad with the sliced grilled chicken breast.
- 7
Optional Salmon
If desired, grill a salmon fillet seasoned with salt and pepper in the same manner as the chicken. Slice and place on top of the salad.
- 8
Serve
Serve immediately, garnished with additional parmesan cheese if desired.
