Cooking Chicken Strips

Prepare Chicken
Cut the chicken breasts into strips, about 1 inch wide.

Marinate
In a bowl, soak the chicken strips in buttermilk for at least 30 minutes, or up to overnight in the refrigerator.

Prepare Breading
In a separate bowl, mix together flour, cornstarch, salt, black pepper, garlic powder, and onion powder.

Bread Chicken
Remove the chicken from the buttermilk and let the excess drip off. Dredge each strip in the flour mixture until well coated.

Fry Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the chicken strips in batches, cooking for 4-5 minutes on each side or until golden brown and cooked through. Drain on paper towels.
Assembling the Salad

Prepare the Salad Base
In a large salad bowl, add the mixed salad greens as the base.

Add Vegetables
Top the greens with diced tomato, sliced baby carrots, and shredded cheddar cheese.

Add Eggs
Arrange the sliced hard-boiled eggs on top of the salad.

Add Chicken
Place the fried chicken strips on top of the salad.

Dress the Salad
Drizzle ranch dressing over the salad just before serving. Toss gently to combine, if desired.
