Prepare the Seafood
Rinse the catfish fillets and jumbo shrimp under cold water and pat them dry with paper towels.

Make the Wet Mixture
In a large bowl, combine buttermilk and hot sauce. Mix well.

Soak the Seafood
Add the catfish fillets and jumbo shrimp to the buttermilk mixture. Ensure they are well coated. Cover and let them marinate in the refrigerator for at least 30 minutes.

Combine Dry Ingredients
In a separate bowl, mix together cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper until well combined.

Prepare for Dredging
Remove the catfish and shrimp from the buttermilk mixture, allowing excess liquid to drip off. Dredge each piece in the cornmeal mixture, ensuring they are fully coated.
Frying

Heat the Oil
In a large, deep skillet or frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Seafood
Carefully add the breaded catfish and shrimp to the hot oil in batches, avoiding overcrowding. Fry for about 4-5 minutes per side or until golden brown and cooked through. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.
