Method

Preparing the Marinara Sauce

    Sauté the Garlic

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add Tomatoes and Seasonings

    Stir in the canned crushed tomatoes and add the dried oregano, dried basil, salt, black pepper, and sugar. Bring the mixture to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 20-25 minutes, stirring occasionally. Adjust the seasoning as needed.

Preparing the Calamari

    Prepare the Coating

    In a large bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, and paprika.

    Dredge the Calamari

    In another bowl, beat the eggs. Dip each calamari ring into the egg, then coat it in the flour mixture, shaking off any excess.

    Heat the Oil

    In a deep frying pan or pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.

Serving

    Plate the Dish

    Serve the fried calamari hot with the marinara sauce on the side for dipping.
