Method

Preparing the Steak

    Prepare the Steak

    Cut the round steak into serving-size pieces, about 3-4 ounces each. Tenderize the meat with a meat mallet until it's about 1/2 inch thick.

    Season the Steak

    Season both sides of the steak pieces with salt and black pepper.

    Batter the Steak

    In a shallow dish, pour the buttermilk. In another dish, combine the flour with a pinch of salt and pepper. Dip each piece of steak in the buttermilk, then dredge in the flour mixture, coating well. Set aside.

Frying the Steak

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until hot.

    Fry the Steak

    Carefully place the battered steak pieces in the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the steak and place on paper towels to drain excess oil.

Making the Gravy

    Prepare the Roux

    In the same skillet used for frying the steak, remove excess oil, leaving about 2 tablespoons. Add butter to the skillet over medium heat until melted.

    Add Flour

    Whisk in the cup of flour and cook, stirring continuously, for about 1-2 minutes until the mixture turns golden brown.

    Make the Gravy

    Gradually whisk in the milk until smooth. Continue to cook until the gravy thickens, about 3-5 minutes. Season with salt and black pepper to taste.

Serving

    Plate the Dish

    Serve the fried steak hot, smothered with the warm gravy. Enjoy with your favorite side dishes!
