Preparation

    Prepare the Filet

    Remove the center-cut filet from the refrigerator and let it sit at room temperature for 30 minutes before cooking. This allows for even cooking.

    Season the Filet

    Pat the filet dry with paper towels. Season both sides generously with salt and black pepper.

    Prep the Garlic and Rosemary

    Mince the garlic cloves and chop the fresh rosemary finely.

    Heat the Pan

    In a cast-iron skillet or heavy-bottom pan, heat the olive oil over medium-high heat until shimmering.

    Sear the Filet

    Place the seasoned filet in the hot skillet and sear for 4-5 minutes on one side, without moving it, until a nice crust forms.

    Flip and Add Flavor

    Flip the filet over and add the minced garlic and chopped rosemary to the pan. Sear the other side for an additional 4-5 minutes for medium-rare.

    Check for Doneness

    Use a meat thermometer to check the internal temperature. Aim for 130°F (54°C) for medium-rare.

    Rest the Filet

    Remove the filet from the pan and let it rest on a cutting board for 5 minutes before slicing.

    Prepare Asparagus

    While the filet is resting, steam or sauté the asparagus for about 5-7 minutes until tender.

    Preheat the oven to 400°F (200°C). Toss baby potatoes with olive oil, salt, and pepper, and roast for 20-25 minutes until golden and tender.
