Method

Preparing the Salmon

    Marinate the Salmon

    In a small bowl, mix olive oil, lemon juice, salt, and black pepper. Coat the salmon fillet with the marinade and let it sit for about 15 minutes.

    Broil the Salmon

    Preheat the broiler. Place the marinated salmon fillet on a broiler pan and broil it for about 6-8 minutes per side, or until the salmon flakes easily with a fork. Remove from the oven and let it rest for a few minutes before slicing.

Assembling the Salad

    Prepare the Salad Base

    In a large bowl, combine the mixed greens, sliced red onion, diced tomato, sliced egg, diced pineapple, and baby carrots.

    Add the Salmon

    Slice the broiled salmon into bite-sized pieces and add it to the salad mixture.

    Top with Cheese

    Sprinkle the shredded Swiss cheese over the top of the salad.

    Serve

    Toss the salad gently to combine all the ingredients and serve immediately with your choice of dressing.
