    Prepare the Filet Mignon

    Remove the Angus filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.

    Season the Meat

    Pat the filet dry with paper towels. Rub the olive oil over the surface of the meat. Sprinkle salt, black pepper, garlic powder, and fresh rosemary evenly over both sides of the filet. Press the spices into the meat to ensure they adhere.

    Preheat the Skillet

    Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat for about 5 minutes until it's very hot.

    Sear the Filet

    Once the skillet is hot, add the seasoned Angus filet mignon. Sear for about 4-5 minutes on one side until a brown crust forms.

    Flip and Cook

    Flip the filet using tongs and cook for an additional 4-5 minutes for medium-rare (internal temperature of 130°F). Adjust the cooking time for your desired doneness.

    Remove the filet from the skillet and place it on a cutting board. Tent with aluminum foil and let it rest for about 5-10 minutes to allow the juices to redistribute.
