Prepare the Fish
Cut the cod fillets into chunks, about 2 inches in size. Pat them dry with paper towels and season lightly with salt.

Make the Tempura Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the cold sparkling water while stirring gently until just combined; do not overmix.

Heat the Oil
In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Fish
Dunk each piece of cod into the tempura batter, allowing excess batter to drip off. Carefully place the battered fish into the hot oil, frying a few pieces at a time to avoid overcrowding. Fry for about 4-5 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels.

Serve the tempura battered fish hot, alongside house tartar sauce and your choice of chips.
