Prepare the crust
Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Press the mixture into the bottom and slightly up the sides of a 9-inch springform pan.

Bake the crust
Bake the crust in the preheated oven for 10 minutes. Remove and let it cool while preparing the filling.

Make the filling
In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add in the heavy cream, sugar, vanilla extract, and salt, mixing until well combined. Add the eggs one at a time, mixing on low speed until just incorporated.

Bake the cheesecake
Pour the cream cheese mixture into the cooled crust. Bake in the oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool and chill
Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour. Remove from the oven and let it cool completely at room temperature. Refrigerate for at least 4 hours, preferably overnight, before serving.

Top with your choice of sauce such as strawberry, raspberry, huckleberry, caramel, or chocolate sauce before serving.
