    Preheat your oven to 350°F (175°C). Grease and flour four 9-inch round cake pans.

    In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.

    Combine Wet Ingredients

    In another bowl, beat together the sugar, oil, eggs, and vanilla until well combined.

    Combine Mixtures

    Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

    Add Carrots, Raisins, and Walnuts

    Fold in the grated carrots, raisins, and chopped walnuts until evenly distributed.

    Bake the Cakes

    Divide the batter evenly among the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
