Prepare the Burger Patty

Mash the Beans
In a large mixing bowl, mash the black beans with a fork until mostly smooth but still slightly chunky.

Mix Ingredients
Add the cooked quinoa, grated carrot, chopped onion, minced garlic, cumin powder, chili powder, beaten egg, breadcrumbs, salt, and black pepper to the mashed beans. Mix until well combined.

Shape the Patties
Form the mixture into 4 equal-sized patties.

Cook the Patties
Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-7 minutes on each side or until golden brown.

Assemble the Burger

Toast the Buns
Lightly toast the potato buns on a skillet until golden brown.

Add the Patty
Place the cooked veggie patties on the bottom half of each toasted bun.

Add Toppings
Layer the lettuce leaves, tomato slices, pickles, avocado, and onion on top of the patties.

Finish the Burger
Cover with the top half of the bun and serve immediately.
