Brining the Turkey

Prepare the Brine
In a large pot, combine 1 gallon of water, 3 cups of kosher salt, 1 cup of brown sugar, 1 tablespoon of whole black peppercorns, 5 sprigs of fresh rosemary, 5 sprigs of fresh thyme, and 5 cloves of crushed garlic. Stir until the salt and sugar are dissolved.

Brine the Turkey
Submerge the whole turkey in the brine solution and refrigerate for at least 12 hours or overnight.
Preparing the Herb Butter

Make the Herb Butter
In a bowl, combine 1 cup of unsalted butter, 2 tablespoons of chopped fresh sage, 2 tablespoons of chopped fresh parsley, and 1 tablespoon of lemon zest. Mix until well combined.

Combine the Stuffing
In a large bowl, combine the sautéed vegetables with 4 cups of bread cubes, 2 cups of chicken broth, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix until well combined.
Roasting the Turkey

Preheat the Oven
Preheat your oven to 325°F (165°C).

Prepare the Turkey for Roasting
Remove the turkey from the brine and pat dry with paper towels. Rub the herb butter all over the turkey, including under the skin.

Stuff the Turkey
Fill the cavity of the turkey with the vegetable stuffing.

Roast the Turkey
Place the turkey in a roasting pan and roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C).

Once cooked, let the turkey rest for at least 30 minutes before carving.
