Brisket Preparation

Prepare the Brisket
Rub the brisket with beef rub and let it sit for at least 1 hour at room temperature to absorb flavors.

Slice the Brisket
Once cooked, let the brisket rest for 30 minutes before slicing against the grain into thin slices.
Pulled Chicken Preparation

Prepare the Chicken
Rub the chicken thighs with chicken rub. Let them marinate for about 30 minutes.

Cook the Chicken
Place the chicken in a slow cooker and cook on low for 6-8 hours or until the chicken is tender and can be shredded easily.

Pulled Pork Preparation

Prepare the Pork
Rub the pork shoulder with pork rub and let it marinate for about 1 hour.

Cook the Pork
Smoke the pork shoulder at 225°F (107°C) using the same method as the brisket for about 8-10 hours or until the internal temperature reaches 195°F (90°C).

Assemble the Two Timer Combo
On each bun, layer a generous amount of sliced brisket followed by either the pulled chicken or pulled pork. Optionally top with coleslaw and pickles.

Serve immediately with extra BBQ sauce on the side.
