Prepare Chicken and Bacon

Cook the Chicken
Preheat your grill to medium-high heat. Rub the chicken breasts with olive oil, salt, and black pepper. Place the chicken on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest.

Cook the Bacon
In a skillet over medium heat, cook the bacon strips until crispy, about 5-7 minutes. Drain on paper towels and set aside.
Make Tomato Basil Mayo

Combine Ingredients
In a bowl, mix together the mayonnaise, chopped fresh basil, finely chopped tomato, and minced garlic. Stir until well combined.
Assemble the Sandwich

Prepare the Hoagie Rolls
Slice the hoagie rolls open but do not cut all the way through. Lightly toast them on the grill or in a toaster until golden brown.

Add the Ingredients
Spread a generous amount of the tomato basil mayo on the inside of each hoagie roll. Slice the grilled chicken breast and layer it on the mayo, followed by crispy bacon and provolone cheese slices.

Melt the Cheese
If desired, place the assembled sandwiches back on the grill or under a broiler for a couple of minutes until the provolone cheese is melted.
