Filling Preparation

    Cook the Spinach

    In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped fresh spinach and sauté until wilted. Remove from heat and let it cool.

    Sauté Onion and Garlic

    In the same pot, add another tablespoon of olive oil. Sauté the finely chopped onion until translucent, about 5 minutes. Add minced garlic and sauté for another minute.

    Mix Filling Ingredients

    In a mixing bowl, combine the cooked spinach, sautéed onion and garlic, crumbled feta cheese, beaten egg, salt, black pepper, and nutmeg. Mix until well combined.

Pastry Preparation

    Prepare Filo Pastry

    Preheat your oven to 180°C (350°F). Melt the butter in a small saucepan. Lay one sheet of filo pastry on a clean surface and brush it with melted butter. Layer another sheet on top and brush again with butter. Repeat until you have 4 sheets.

    Fill and Fold

    Place a portion of the spinach filling along one edge of the layered filo sheets. Fold the sides over the filling and roll up tightly to form a log. Place the log seam-side down on a baking sheet lined with parchment paper.

Baking

    Bake Spanakopita

    Brush the top of the rolled spanakopita with more melted butter. Repeat the process for the remaining filling and pastry sheets. Bake in the preheated oven for 25-30 minutes or until golden brown.

Tzatziki Preparation

    Prepare Tzatziki

    While the spanakopita is baking, prepare the tzatziki. Grate the cucumber and squeeze out excess moisture. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt. Stir until well combined.
