Method

Brining the Pork

    Prepare the Brine

    In a large pot, combine the water, salt, sugar, black peppercorns, and bay leaves. Heat until the salt and sugar dissolve, then remove from heat.

    Brine the Pork

    Allow the brine to cool completely. Submerge the pork tenderloin in the brine, cover, and refrigerate for at least 4 hours, preferably overnight.

Marinating the Pork

    Prepare the Marinade

    In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.

    Marinate the Pork

    Remove the pork from the brine and pat dry. Place in a zip-top bag or dish, pour the marinade over it, and seal. Refrigerate for at least 1 hour.

Cooking the Souvlaki

    Prepare the Skewers

    Preheat the grill to medium-high heat. Cut the marinated pork into 1-inch cubes. Thread the cubes onto skewers.

    Grill the Souvlaki

    Grill the skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.

Making the Herbed Rice

    Cook the Rice

    In a saucepan, heat olive oil over medium heat. Add the rice and toast for 2-3 minutes until slightly golden.

    Combine with Broth

    Add chicken broth and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until liquid is absorbed.

    Fluff the rice with a fork and stir in chopped parsley before serving.

Preparing the Braised Green Beans

    Sauté the Garlic

    In a skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add the green beans, salt, and pepper. Sauté for 5-7 minutes until the green beans are tender but still crisp.

Making the Tzatziki Sauce

    Combine Ingredients

    In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt until well combined.

    Chill

    Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
