Preparing the Pulled Pork

    Season the Pork

    In a small bowl, mix the smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper to create a spice rub. Rub this mixture all over the pork shoulder.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). You can use wood chips like hickory or applewood for a flavorful smoke.

    Smoke the Pork

    Place the seasoned pork shoulder in the smoker and smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).

    Rest the Pork

    Once cooked, remove the pork from the smoker, wrap it in foil, and let it rest for at least 30 minutes.

    Shred the Pork

    Using two forks, shred the pork into bite-sized pieces. Mix in the apple cider vinegar and BBQ sauce to combine.

    Cook the Potatoes

    Peel and cut the potatoes into quarters. Boil them in salted water until fork-tender, about 15-20 minutes.

    Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt to taste.

    Cook the Rice

    If you choose rice instead, cook 2 cups of white rice according to package instructions.
