    Cut each potato in half lengthwise to create two equal halves. If desired, you can also cut them into wedges for a different presentation.

Marinade

    In a large bowl, combine the olive oil, smoked paprika, garlic powder, salt, black pepper, and chopped fresh rosemary. Mix well until all the ingredients are fully blended.

    Add the halved or wedged potatoes to the marinade and toss them gently until they are well coated with the mixture. Let them sit for at least 30 minutes to absorb the flavors.

Smoking

    Prepare Smoker

    Preheat your smoker to 225°F (107°C). Use your choice of wood chips for smoking, such as hickory or applewood, which pair well with potatoes.

    Place the marinated potatoes directly on the smoker grates, cut side up. Close the smoker lid and let them smoke for about 1.5 to 2 hours, or until they are tender and infused with a smoky flavor.
