Method
Cooking the Salmon

Prepare the Salmon
Pat the salmon filets dry with paper towels. Season both sides with salt and black pepper.

Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until it shimmers.

Sear the Salmon
Place the salmon filets skin-side down in the hot skillet. Cook for 4-5 minutes without moving them, until the skin is crispy.

Making the Herbed Rice

Rinse the Rice
Rinse the rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a saucepan, combine the rinsed rice, water or broth, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.

Sautéing the Spinach

Sauté the Garlic
Add the minced garlic and sauté for 1 minute until fragrant.

Add Spinach
Add the fresh spinach to the skillet. Sauté, stirring frequently, until the spinach is wilted, about 3-4 minutes.

Season with salt and black pepper to taste, and remove from heat.
