Cut the Kefalotyri cheese into thick slices (about 1/2 inch). Ensure the slices are even to promote uniform frying.

In a shallow dish, season the all-purpose flour with salt and black pepper. Mix well.

Coat the cheese
Dredge each slice of cheese in the seasoned flour, ensuring they are fully coated. Shake off any excess flour.

Heat the oil
In a large skillet, heat the olive oil over medium-high heat until it shimmers. You can test the temperature by dropping a small piece of flour into the oil; it should sizzle.

Fry the cheese
Carefully add the coated cheese slices to the hot oil, ensuring not to overcrowd the skillet. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

Drain and serve
Once cooked, transfer the fried cheese to a plate lined with paper towels to drain excess oil. Squeeze fresh lemon juice over the hot cheese before serving.
