Soak the Beans
Rinse the dry black beans, pinto beans, and kidney beans under cold water. Place them in a large bowl and cover with water. Soak the beans for at least 8 hours or overnight.

Cook the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, minced garlic, bell pepper, diced celery, and diced carrot. Sauté for about 5-7 minutes until the vegetables are softened.

Stir in the cumin powder, smoked paprika, black pepper, and bay leaves. Cook for another 2 minutes until the spices are fragrant.

Combine the Beans and Liquid
Drain and rinse the soaked beans. Add them to the pot, along with the vegetable broth and water. Bring the mixture to a boil.

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more water if needed.
