Prepare the meat
Rinse the turkey half and pork shoulder under cold water. Pat them dry with paper towels. Place the pork shoulder in a large bowl and rub the olive oil all over it.

In a small bowl, mix together paprika, garlic powder, onion powder, brown sugar, cayenne pepper, salt, black pepper, and ground cumin. Rub this spice mixture all over the pork shoulder, ensuring it's evenly coated.
