Method

Pulled Chicken Preparation

  1. 1

    Prepare the Chicken

In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

  2. 2

    Season and Cook

Add the chicken breasts to the bowl and coat them evenly with the spice mixture. Preheat your smoker or grill to a temperature of 225°F (107°C) and smoke the chicken for about 2-3 hours, until the internal temperature reaches 165°F (74°C).

  3. 3

    Shred the Chicken

Once the chicken is cooked, remove it from the grill and let it rest for 10 minutes. Then, using two forks, shred the chicken into bite-sized pieces.

  4. 4

    Mix with BBQ Sauce

In a large mixing bowl, combine the shredded chicken with the BBQ sauce, stirring until the chicken is well coated.

Sandwich Assembly

  1. 5

    Toast the Buns

Lightly toast the sweet potato buns on a grill or in a toaster until they are golden brown.

  2. 6

    Assemble the Sandwich

Place a generous portion of the pulled chicken on the bottom half of each bun. Top with a slice of cheddar cheese and add pickles on top of the cheese. Place the top half of the bun over the pickles.

  3. 7

    Serve

Serve the pulled chicken sandwiches warm with your choice of sides.
