Pulled Chicken Preparation

Prepare the Chicken
In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

Season and Cook
Add the chicken breasts to the bowl and coat them evenly with the spice mixture. Preheat your smoker or grill to a temperature of 225°F (107°C) and smoke the chicken for about 2-3 hours, until the internal temperature reaches 165°F (74°C).

Mix with BBQ Sauce
In a large mixing bowl, combine the shredded chicken with the BBQ sauce, stirring until the chicken is well coated.

Toast the Buns
Lightly toast the sweet potato buns on a grill or in a toaster until they are golden brown.

Assemble the Sandwich
Place a generous portion of the pulled chicken on the bottom half of each bun. Top with a slice of cheddar cheese and add pickles on top of the cheese. Place the top half of the bun over the pickles.
