For the Prime Rib Chop

Method

Preparing the Prime Rib Chop

  1. 1

    Season the Meat

Rub each prime rib chop with olive oil, garlic powder, onion powder, salt, black pepper, fresh rosemary, and fresh thyme on both sides. Make sure the seasoning is evenly distributed.

  2. 2

    Preheat the Oven

Preheat your oven to 400°F (200°C). This will ensure the chops cook evenly.

  3. 3

    Sear the Chops

In a large oven-safe skillet, heat the skillet over medium-high heat. Once hot, sear the rib chops for about 3-4 minutes on each side until a nice brown crust forms.

  4. 4

    Roast the Chops

Transfer the skillet to the preheated oven and roast the rib chops for 15-20 minutes or until they reach your desired doneness (130°F for medium-rare).

  5. 5

    Rest the Meat

Remove the rib chops from the oven and let them rest for 5-10 minutes before slicing. This helps retain the juices.

Making the Sauce

  1. 6

    Sauté Shallots

In the same skillet used for the rib chops, add 2 tablespoons of butter over medium heat. Once melted, add the finely chopped shallots and sauté until translucent, about 2-3 minutes.

  2. 7

    Deglaze the Pan

Pour in 1 cup of red wine and scrape the bottom of the skillet to deglaze, bringing all the flavorful bits into the sauce.

  3. 8

    Add Broth and Season

Add 1 cup of beef broth and 1 tablespoon of Worcestershire sauce. Stir well and bring to a gentle simmer.

  4. 9

    Thicken the Sauce

Allow the sauce to simmer for about 10-15 minutes until it reduces and thickens slightly. Season with salt and black pepper to taste.

  5. 10

    Serve

Slice the rested prime rib chops and serve with the sauce drizzled over the top.
