Preparation

    Prepare the Roast

    Remove the prime rib roast from the refrigerator and allow it to come to room temperature for about 2 hours.

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

Seasoning

    Season the Roast

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, chopped rosemary, and chopped thyme. Rub the olive oil all over the roast, then generously apply the seasoning mixture, ensuring it's evenly coated.

Cooking

    Sear the Roast

    Place the prime rib roast on a rack in a roasting pan and put it in the preheated oven. Sear for 20 minutes at 450°F (232°C).

    Lower the Temperature

    After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting. Use a meat thermometer to check the internal temperature.

    Check for Doneness

    For medium-rare, aim for an internal temperature of 130°F (54°C), which should take about 1.5 to 2 hours, depending on the size of the roast.

    Rest the Meat

    Once done, remove the roast from the oven and tent it with aluminum foil. Let it rest for at least 20 minutes before carving.

Serving

    Carve and Serve

    Slice the prime rib against the grain and serve with horseradish sauce and au jus on the side, if desired.
