Dough Preparation

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Whisk together until well blended.

    Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

    Add Water

    Gradually add cold water, one tablespoon at a time, mixing with a fork until the dough comes together. You may not need all the water.

    Chill Dough

    Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    In a medium bowl, beat the cream cheese until smooth. Gradually add the powdered sugar, mixing until combined. Stir in the vanilla extract and lemon zest until well blended.

Assembling Pastries
