Cooking the Stew

    Sear the Pork

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced pork shoulder and sear until browned on all sides, about 5-7 minutes. Remove pork and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.

    Combine Ingredients

    Return the seared pork to the pot. Add the diced potatoes, green chiles, chicken broth, cumin, oregano, salt, and black pepper. Stir well to combine.

    Simmer the Stew

    Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 1.5 to 2 hours, or until the pork is tender and the flavors have melded together.
