Chicken and Sauce

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper on both sides.

    Sauté Chicken

    In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until cooked through. Remove from skillet and set aside.

    Cook Vegetables

    In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until onions are translucent. Then add the sliced mushrooms and cook until they are tender, about 5 minutes.

    Add Port Wine

    Pour the port wine into the skillet and scrape the bottom to deglaze. Let it simmer for about 5 minutes, allowing the alcohol to evaporate and the sauce to thicken.

    Combine Chicken and Sauce

    Return the chicken to the skillet, spoon some sauce over the top, and let it simmer together for another 3-4 minutes. Stir in chopped scallions before serving.

Fettuccini

    Boil Water

    In a large pot, bring 4 liters of water to a boil. Add 1 tablespoon of salt to the boiling water.

    Cook Fettuccini

    Add the fettuccini pasta to the boiling water and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Garlic Bread

    Prepare Garlic Butter

    In a bowl, mix the softened butter with minced garlic and chopped parsley until well combined.

    Prepare Bread

    Slice the French bread in half lengthwise and spread the garlic butter mixture evenly over both halves.

    Toast Bread

    Place the bread halves under a broiler on high for about 2-3 minutes or until the edges are golden and crispy. Keep a close eye to avoid burning.
