    Prepare the Chicken

    Season the chicken breasts with salt and black pepper on both sides.

    Sauté the Chicken

    In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sauté for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add sliced onion and sauté until translucent, about 3-4 minutes. Then add the diced tomatoes, capers, and olives. Stir well.

    Deglaze with Wine

    Pour in the white wine and let it simmer for about 5 minutes, allowing the sauce to reduce slightly.

    Combine and Finish

    Return the sautéed chicken to the skillet, coating it with the sauce. Let it cook for another 2-3 minutes to warm through.

Garlic Mashed Potatoes

    Boil the Potatoes

    Place the peeled and cubed potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Add Garlic

    In the last 5 minutes of cooking, add the minced garlic to the pot.

    Drain and Mash

    Once the potatoes and garlic are tender, drain them and return to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Serve

    Plate the Dish

    Serve the chicken and caper mixture over a bed of garlic mashed potatoes. Sprinkle with grated Parmesan cheese before serving.
