Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Sauté the Chicken
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sauté for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Cook the Vegetables
In the same skillet, add sliced onion and sauté until translucent, about 3-4 minutes. Then add the diced tomatoes, capers, and olives. Stir well.

Deglaze with Wine
Pour in the white wine and let it simmer for about 5 minutes, allowing the sauce to reduce slightly.

Combine and Finish
Return the sautéed chicken to the skillet, coating it with the sauce. Let it cook for another 2-3 minutes to warm through.

Plate the Dish
Serve the chicken and caper mixture over a bed of garlic mashed potatoes. Sprinkle with grated Parmesan cheese before serving.
