Crust Preparation

Prepare the Crust
In a medium bowl, mix the graham cracker crumbs, granulated sugar, melted butter, and salt until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Preheat your oven to 350°F (175°C). Bake the crust for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

Mix the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and beat until well combined. Add the sour cream, vanilla extract, lemon zest, and mix until smooth.

Incorporate Eggs and Flour
Add the eggs one at a time, mixing well after each addition. Finally, add the all-purpose flour and mix until just combined; be careful not to over-mix.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.
Baking the Cheesecake

Bake the Cheesecake
Bake the cheesecake in the preheated oven for about 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside with the oven door slightly ajar for 1 hour to cool slowly.

Chill the Cheesecake
After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight.
Serving

Serve with Toppings
Once chilled, remove the cheesecake from the springform pan. Top with fresh berries, chocolate sauce, and whipped cream as desired. Slice and serve.
