Method

Crust Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed unsalted butter and mix until the mixture resembles coarse crumbs.

  2. 2

    Add Ice Water

Gradually add the ice water, one tablespoon at a time, mixing gently until the dough comes together. Be careful not to overwork the dough.

  3. 3

    Chill the Dough

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  4. 4

    Roll Out the Dough

On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer it to a 9-inch pie dish and trim the edges.

Filling Preparation

  1. 5

    Preheat Oven

Preheat your oven to 350°F (175°C).

  2. 6

    Mix Filling Ingredients

In a large mixing bowl, whisk together the buttermilk, granulated sugar, brown sugar, eggs, vanilla extract, cornmeal, and salt until well combined.

  3. 7

    Add Pecans

Stir in the chopped pecans until evenly distributed throughout the mixture.

  4. 8

    Fill the Crust

Pour the filling mixture into the prepared pie crust, spreading it evenly.

  5. 9

    Bake

Bake in the preheated oven for 45-50 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.

  6. 10

    Cool and Serve

Allow the pie to cool for at least 1 hour before slicing. Serve warm or at room temperature.
