    Chop the Vegetables

    Dice the onion, carrot, and tomatoes into small pieces. Mince the garlic cloves.

    Rinse the Lentils

    Thoroughly rinse the red lentils under cold water to remove any dust.

Cooking

    Sauté the Onions and Garlic

    In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.

    Add Carrots and Tomatoes

    Stir in the diced carrot and tomatoes, cooking for an additional 3-4 minutes.

    Combine Lentils and Broth

    Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil.

    Season the Soup

    Once boiling, reduce the heat to low. Add salt, black pepper, paprika, and cumin. Stir well.

    Cover the pot and let the soup simmer for about 20-25 minutes, or until the lentils are tender.

    Once the lentils are cooked, stir in the lemon juice. Adjust seasoning if necessary.
