Preparation of Filling

Mix the Filling
In a large bowl, combine the crushed walnuts, ground cinnamon, ground cloves, and honey. Mix until the ingredients are well incorporated and set aside.

Prepare Filo Pastry
Preheat your oven to 350°F (175°C). Unroll the filo pastry and cover it with a damp cloth to prevent it from drying out. Melt the unsalted butter in a small saucepan or microwave.

Add the Filling
Spread a layer of the walnut filling evenly over the buttered pastry. Add 2-3 more layers of buttered filo pastry on top of the filling, brushing each layer with butter. Repeat the layering process, alternating between filling and pastry, until all filling is used. Finish with 8-10 layers of buttered filo pastry on top.

Bake the Baklava
Using a sharp knife, cut the assembled baklava into diamond or square shapes. Bake in the preheated oven for about 45-50 minutes or until the top is golden brown.

Make the Syrup
While the baklava is baking, prepare the syrup. In a saucepan, combine sugar, water, honey, ground cinnamon, ground cloves, and vanilla extract. Bring to a boil, then reduce the heat and let it simmer for about 10-15 minutes until it thickens slightly.

Pour Syrup Over Baklava
Once the baklava is done baking, remove it from the oven and immediately pour the hot syrup over the baklava evenly. Allow it to soak for at least 4 hours, preferably overnight, before serving.
