Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Turkey

    Rinse the baby turkey under cold water and pat dry with paper towels. Place it in a roasting pan.

    Season the Turkey

    In a small bowl, mix together olive oil, salt, black pepper, garlic powder, onion powder, thyme, rosemary, and lemon juice. Rub this mixture all over the turkey, including under the skin for added flavor.

Stuffing

    Prepare the Stuffing

    In a large skillet over medium heat, add a splash of olive oil and sauté chopped onions and celery until soft, about 5 minutes.

    Combine Ingredients

    In a large bowl, combine the sautéed vegetables with bread cubes, chicken broth, chopped parsley, and sage. Mix until well combined. The mixture should be moist but not soggy.

    Stuff the Turkey

    Fill the cavity of the turkey with the stuffing mixture. Do not overpack.

Roasting

    Truss the Turkey

    Tie the legs of the turkey together with kitchen twine and tuck the wing tips under the bird.

    Roast the Turkey

    Cover the turkey with aluminum foil and roast in the preheated oven. After 1.5 hours, remove the foil and continue roasting for another 30-60 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.

    Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving.
