Method

Steak Preparation

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Mix well.

  2. 2

    Marinate the Lamb

Rub the marinade over the Colorado lamb top round and let it sit for at least 30 minutes, or ideally overnight in the refrigerator for better flavor.

  3. 3

    Grill the Steak

Preheat the grill to medium-high heat. Grill the marinated lamb for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let rest for 5 minutes before slicing.

Garlic Mashed Potatoes Preparation

  1. 4

    Cook the Potatoes

Peel and chop the potatoes into quarters. Place them in a large pot and cover with water. Add salt and bring to a boil. Cook until tender, about 15-20 minutes.

  2. 5

    Prepare the Garlic

In the last 5 minutes of cooking the potatoes, add the garlic cloves to the pot.

  3. 6

    Mash the Potatoes

Drain the potatoes and garlic. In a bowl, combine the potatoes, garlic, butter, milk, salt, and black pepper. Mash until smooth and creamy.

Butter Braised Green Beans Preparation

  1. 7

    Prepare the Green Beans

Trim the ends of the green beans and set aside.

  2. 8

    Sauté the Green Beans

In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the green beans and cook for 5-7 minutes until tender-crisp. Season with salt and black pepper.

Tzatziki Preparation

  1. 9

    Prepare the Cucumber

Grate the cucumber and squeeze out the excess moisture using a clean cloth or paper towel.

  2. 10

    Combine Ingredients

In a bowl, mix the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt. Stir until well combined.

  3. 11

    Chill the Tzatziki

Cover and refrigerate the tzatziki for at least 30 minutes before serving to let the flavors meld.
