Braised Lamb Shank

    Prepare the Lamb

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the lamb shanks with salt and black pepper and brown them on all sides, about 4-5 minutes per side. Remove and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion, minced garlic, diced carrot, and diced celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Deglaze and Add Tomatoes

    Pour in the red wine to deglaze the pot, scraping up any browned bits. Let it simmer for 2 minutes. Then, add the crushed tomatoes, beef broth, bay leaves, and return the lamb shanks to the pot.

    Braised Cooking

    Cover the pot and reduce the heat to low. Let the lamb shanks braise for about 2 hours, or until the meat is fork-tender.

Herbed Orzo Pasta

    Cook the Orzo

    In a saucepan, bring water to a boil. Add the orzo pasta and salt. Cook according to package instructions, usually about 8-10 minutes, until al dente.

    Add Herbs

    Once cooked, drain the orzo and return it to the pan. Drizzle with olive oil and stir in chopped fresh parsley.

Sautéed Vegetables

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add diced zucchini and bell pepper. Sauté for about 5-7 minutes until tender. Season with salt and black pepper.

Assembly

    Serve the Dish

    On a plate, serve a portion of herbed orzo topped with a braised lamb shank. Spoon the tomato sauce over the lamb and orzo. Add a side of sautéed vegetables and sprinkle crumbled feta cheese on top.
